Previous Work Experience: Has spent most of his working life in the service industry.  Started out as a cook in Germany, then went to hotel management school.  After graduating, he worked in 5-star hotels all over the world, including England, Germany, Tibet and Hong Kong.  Served as general manager of the Grand Formosa Taichung Hotel.

What Brought You to Taiwan: 'I came to Taichung to open the Grand Formosa [Hotel].'

Favorite Dish I Offer: Thai-style seafood pasta ('I adapted this dish from one served at my favorite Thai restaurant in Hong Kong.')

Favorite Dish I Don't Offer: Noodles and fish soup from outdoor vendors or 'hole-in-the-wall' places

Best Thing About Running A Taichung Restaurant: 'The lack of restrictions.  It's easy to become an entrepreneur in Taichung, especially if you want to open a small business.'

Worst Thing About Running A Taichung Restaurant: 'The lack of restrictions is sometimes a bad thing because this lack of discipline can lead to chaos.'

Favorite Non-Work Activity: Going to the mountains, camping, soaking in hot springs.

Favorite Other Restaurants: Night market noodle stalls
