Originally founded in 1985 in Hiroshima, Bakudanya created its own ice-chilled ramen noodles, which have since become a local specialty. As the chain moves to Taiwan, Taipei-ers now have the chance to try these special noodles in Yongkang. --By Sharon Huang, translated by Ann Lee

A. The secret to the chewy texture of the Hiroshima-style Tsukemen (NT$180-240) lies in the chefs' preparation. After the noodles are boiled, they are washed with cold, clean water, and then chilled immediately with ice. After they are chilled, the noodles are "sliced" with water, a procedure that requires skillful hands and lots of experience. Served with a vinegar-based sauce, sesame seeds and plenty of vegetables, these noodles are becoming a local favorite as well. For a good side dish, try the He-Feng Fried Chicken Nuggets (NT$120).

B. If you don't want cold noodles, try the sizzling hot Spicy Noodles with Dipping Sauce (NT$180-240). With slices of honey barbecued pork and plenty of vegetables, these noodles in pork broth have a good balance of flavors. If you still have room for more, try a plate of Grilled Meat Dumplings (NT$80).
