     The sashimi and sushi in Dong Won Sushi are all very popular. Much of the fish served here can¡¦t be found in Taiwan¡¦s waters and, therefore, are air-shipped from Hokkaido, Japan. The fresh fish and shellfish are all presented in Etomae-style sushi. These beautiful delicacies are fresh and sweetly rich in flavor. The vinegar rice is made from Taiwan's specialty Tsuo-Shei stream rice, converted to a Kanto style.
     There are normally five chefs on the sushi workstation. Watching them at work is a very appetizing experience. The flat fish sushi (NT$150 for one) is made from fish caught on the spot and prepared to order. The shellfish sushi (NT$200) is also opened and cut when you order. Chef's preparation is all so fast that the fish and shellfish are still twitching when eaten. The wonderfully rich-tasting crab and pear sushi (NT$350 for 8) come specially recommended.
