Dayumen is Taiwan's only restaurant selling a specialty dish called Zi Tong Hot Pot (or "Purple Copper Pot"). These pots are made from copper, a very efficient conductor of heat. Thus, the food inside maintains a more constant warm temperature. The slightly expensive bamboo charcoal used to heat the pots also optimizes cooking without excess smoke, helping improve ingredients' flavors and texture. The main kitchen makes all the distinctly flavored sauces, which stand out from other eateries and can also be custom made. Dayumen started out in Taipei's Shulin district, where it was known for offering delicate a la carte dishes. In Taichung, the owners have decided to exclusively focus on all-you-can-eat dining (NT$359/adults, NT$159/kids on weekdays; NT$399/229 weekends). A. Recommended grilled items here include fatty beef/pork and pork chops. The manager stresses heat control when cooking these meats--the trick is to limit grilling to 30 to 60 seconds. The mesmerizing smell of the beef and pork's tenderness make them very popular. A tip for the pork chop fans--roast the chops on the grill until the meat is dry for an extraordinary texture.
B. Zi Tong Hot Pot comes with two soup types, super spicy or a clear broth, which automatically include ingredients like marinated duck blood cake and tofu. The manager says it takes an entire night for the sauces to soak into the ingredients, making them worth trying.
