A good dish of ramen, or Japanese-style hand-pulled noodles, must include a good soup base, fantastic noodles and great toppings. At Zuo Ye, the ramen is not pulled but handmade with their very own special noodle-making method. These special ingredients and noodle-production methods not only add flavor to the noodles, but also improve their elasticity. There are two main types of soup bases available here: pork bone broth and chicken bone broth. The pork bone variety takes at least 24 hours to stew. As bone marrow and collagen are mixed into the broth, the soup takes on a light, creamy-white color, and a matching light, creamy flavor. At this point, the soup has truly reached its ramen soup-worthy potential.
