The new
soup dumplings (NT$170 for 10), improved from the traditional Su-style,
are juicer with less oil. The thin wrapper and succulent filling
have captured numerous hearts. Although it is a branch of the Taipei
restaurant, the chefs here are free to create their own flavor.
Taichung¡¦s head chef, Yinwen Tung, travels to Shanghai about every
six months to learn innovative ways of incorporating local flavors
to create new amazing dishes. His delicious innovation, Hufong Shrimp
Cake (NT$180), is filled shrimp cakes deep-fried, then covered in
sweet and sour plum sauce. The Hufong Bone (NT$80) is marinated
in a special sauce for 12 hours before deep-frying for a crispy
and tender taste. Another great choice is the Shanghai Rice (NT$160)
with bacon, green bell peppers and mushrooms for a combination of
Western and Chinese flavors.
