Previous Work Experience: Has been working in the service industry since age 17--various hotel jobs in Australia, bar manager at Taipei's Passion restaurant, Pig & Whistle, helped to open Taichung and Kaohsiung 'Pigs', worked with Dereke Bruce to start up Finga's Italian.

What Brought You to Taiwan: 'A good friend of mine was working in Taipei and asked me to go there to substitute for him so he could do some traveling.  I had an interest in Asia and I wanted to study Chinese.'

Favorite Dishes I Offer: Pesto pasta and barbecued pork baby-back ribs

Favorite Dish I Don't Offer: Roast leg of lamb

Best Thing About Running A Taichung Restaurant: 'The lack of red tape in opening a restaurant.'

Worst Thing About Running A Taichung Restaurant: 'Serving food that suits the tastes of both locals and foreigners, while at the same time trying to keep your integrity.'

Favorite Non-Work Activities: Running, scuba diving and watching movies

Favorite Other Restaurants: Northern Chinese or Japanese restaurants.
