The Hi Sushi Corporation recently opened a new branch in the bustling Xinyi district. Apart from offering a variety of hand-rolls, this new location has an extensive menu, which includes steamed, roasted and deep fried agemono dishes. Chefs here prepare their dishes with seasonal ingredients that make each item fresh and flavorful--just the way seafood should taste. The store's manager is also an expert in Japanese and French cuisine, so you just might see a little French fusion here, too. --By Sharon Huang, translated by Ann Lee

A. For the Braised Fish with Japanese Sake and Soy Sauce (NT$180), the fish is braised with sake and soy sauce for several hours. Each bite is soft and flavorful--it's so soft that you can even eat the bones!

B. The manager at Hi Sushi Kappo has created her own specialties here. Try her Grilled Abalone (NT$450) with Japanese vinegar rice or slightly sauteed shrimp with a cod roe dressing; both have several layers of flavor.
