Noodle lovers like to stare into the semi-open kitchen here and witness the whole process of noodle creation. Pao Ding Noodles, thick chunks of dough cut by hand, are usually served cold, in noodle soup or fried. Shop owner Mr. Guo is regarded as a noodle expert, overseeing the entire production process, from flour on. "Noodles produced here maintain a fresh taste and are completely cooked for easy digestion," he says. Buckwheat noodles, thin noodles and super-thin noodles, along with new flavours or textures of noodles, are also prepared. With the slogan, "Welcome Big Appetite Customers", guests can be assured that they'll get as many noodles as they want, even as the price stays the same.

A. Noodles here are chewier and non-greasy. On the left is the popular dish Five Spice Pork Chop (NT$190 for lunch set or individual-entree dinner order). On the right is Buckwheat Cold Noodles (NT$120), both tasty and healthy.
B. The manager highly recommends the Prime Ribeye (NT$350), a combination of Japanese cold noodles and Chinese beef broth that exudes a sweet fragrance of dried fish and beef. Yummy!
