      The new restaurant on the second floor of the Riviera Hotel will appeal to those who like light and simple California cuisine. Decorated in blue and white, it gives the feel of dining aboard a luxurious ocean liner. In recent years, Taiwanese consumers have upped their expectations with regard to food quality; this has led to a boom in foreign cuisine restaurants, particularly Californian cuisine, which does without the convoluted etiquette of French dining, but remains focused on using original foods. The chef here seizes on the freshness of seasonal vegetables for popular dishes such as Creamy Royal Chicken, Crisp Cheese Salad With Blueberry Vinaigrette Dressing, and Tomato-Based Vegetable Soup. The signature Mango Custard makes for a happy ending to the meal. Dishes are priced from NT$260 to NT$750 with a 10-percent service charge. Reservations are recommended. --By Elizabeth Cheung
