       "How good can the pasta be if it's cooked on the street?" I asked myself as I passed by "Jimmy's Pasta," an impromptu set-up on Wu-hsin Street. After learning that the vendor is none other than Mr. He, former Chef of the Italian Restaurant at the Grand Hyatt Hotel, my doubts were relieved. Mr. He assured me that all the ingredients - tomatoes, bacon and cheeses - are 5-Star Hotel quality. Seafood Pasta (NT$85) combines fresh salmon and shrimp; the Cheese & Meat Spaghetti (NT$65) made with lean pork is the special recommendation of the Chef. All are flavored to suit local tastes. Mr. He promises to introduce more delicious dishes, like Pasta with Clams cooked in White Wine, Pasta with Meat Marinated in Gin and Bacon & Egg Pasta.--By Priscilla Chen
