The food vending machines so ubiquitous in Japanese budget restaurants have arrived in Taichung via Ichirin, whose strict product standards are part of its plan to become a chain restaurant. To introduce authentic Japanese ramen and rice dishes, the restaurant hired a Japanese chef with over 20 years of experience at a traditional high-end Japanese restaurant. A. The refreshing stock is made of chicken and bones, chicken claws various fruit and vegetables, and stewed over three hours. The savory Tokyo Ramen (NT$180) and refreshing Hakodate Ramen (NT$180) are both made with this stock.

B. The traditional Japanese garden-style decor blends white stones and wood to create a calm atmosphere.

IchirinC. Gyudon (beef rice, NT$70) includes a soup. This traditional family dish perfectly combines Australian sliced beef, rice, onions, and sweet and salty sauce. The delicious Half-Cooked Egg (NT$30) comes from free-range chickens.
