Pingtung Chen Family Pig's Knuckle is the fourth-largest food company in Taiwan. The pig's knuckle is made using Chinese medicine for a unique flavor. With this eatery's opening, this specialty dish of the Pingtung area is now available in Taichung. The original owner of this company passed on the techniques for making this specialty--which he learned in Guanzhou--to his son Chen Bin-jou. The pig's knuckle is still made in Pingtung, but is vacuum-packed to ensure freshness and shipped to Taichung. It is available in gift boxes (NT$450 each) , set meals (NT$100 to NT$150) and eight-person banquet meals (NT$900). Mr. Chen is hoping to reach his goal of 100 franchise outlets islandwide in the near future. -By Rachel Chiou
