In Casa restaurant may have good food, but it also serves up great cocktails, thanks to Iceman, who has about a dozen years experience as a bartender and coffee barista. He creatively combines these experiences to invent amazing cocktails like the Tiramisu which, just like the dessert, actually uses marscapone cheese and merges a cocktail, coffee and dessert into one beautiful, delicious package. Summer Surfing is another invention he made up just days before this interview and was inspired by Taichung's balmy temperatures. This fruity, very refreshing drink is extra enjoyable because of the bits of peach pulp it contains. On a hot summer day, you'll almost certainly find yourself ordering more than one.

Ingredients:
1 1/2 Pineapple rings (canned)
1 Peach half (canned)
30cc Triple Sec liqueur
15cc Pineapple syrup
15cc Mango syrup
1 1/2 tablespoons Lemonade powder
50cc Water
Ice cubes
5cc Strawberry syrup or non-alcoholic Blue Curacao

Making it:
Add pineapple rings, pineapple and mango syrups (French Teisseire brand preferred), Triple Sec, and lemonade powder (purchased at specialty stores) to a blender, together with 50cc of water and about a 1.5 glasses of ice cubes. Blend thoroughly to a smoothie-like consistency. Then add peach half and blend very briefly, until the peach is in small shreds, but not completely blended. Take a tall cocktail glass and pour strawberry syrup (or Blue Curacao for a different color) into the bottom. Then add the blender contents on top for an attractive layered look. Garnish with fruit slices and serve with a straw and long spoon. Strawberry, peach and other fruit syrups may also be substituted for different flavors.

Alcoholic drinks are strictly prohibited for those under 18.
