Led by Chef Wang Yang-xiu, a group of young culinary talents is adding something fresh to often-staid authentic Japanese cuisine. After some mixing and matching with perilla herbs, pomegranates, plums and roselle, the boiled, sushi and deep-fried entrees all become surprisingly different and delicious. Set meal prices are between NT$240 and NT$350, and there is NT$40-260 sushi, NT$260-280 sashimi rice, and NT$600-1,000 Chef's Choices, with live seafood sold by current market prices. --By Niang Chen, translated by Angel Pu
A. The Japanese cuisine offered by Chef Wang and his staff is out-of-the-box and full of creativity.
B. Chef's Choice sets (NT$600, NT$800, NT$1,000) have no menu; the chef chooses seasonal ingredients and combines them with fresh seafood shipped from Keelung Port. Some dishes include iced, sweet-and-sour Chinese Yam Noodles with Roselle, Roasted Ivory Shells, and Dry-Fried Fish with Milk and Purple Rice Sauce. One very popular dish is Stewed Ayu Fish with Barley Tea and Preserved Plums, which are quite addictive.
C. The Boneless Beef Short Ribs set (NT$280) includes side dishes, a steamed egg, boiled dish, deep-fried dish, Koshihikari rice, miso soup and dessert.
