Walnut's Castle is a Mediterranean-themed eatery with a homey interior and a menu full of selections incorporating flavors from Spain, France and other European countries. Spain's own diverse history can be see through the ingredient's on Walnut's menu; customers can find all kinds of dishes with olive oil, tomatoes, red peppers and seafood, as well as other specialties like nuts, vanilla, flowers, fresh fruit and cheese. In order to cater to the tastes of local patrons, the chefs have adjusted the flavors and serving styles of some dishes. For example, instead of using a large, communal pan that everyone shares for some Spanish treats, Walnut's serves all dishes more delicately, with single, a la carte servings.

The restaurant wants all of their guests to feel right at home when they visit, so they tend to remember your name and what you like to order. Servers are also coached on their tones, speech and pronunciation before working with customers, so they can provide the best, friendliest service. One recommended dish, the Roast Honey Pig's Trotters (NT$480), is marinated with unique spices, boiled, fried, smoked and then finally roasted--this rids the meat of excess fat, so it is not too greasy. To authenticate its flavor, the trotters are served with imported German sauerkraut and Walnut's homemade honey mustard sauce. Another good choice, the Salmon Rice with Cranberry and Pine Nuts (NT$300) is a marinated hunk of boneless salmon that is fried, spritzed with fresh lime juice, and accompanied by pine nuts, cranberries and other fruit. Other must-try dishes include Shrimp Ball Rice with Raspberry and Walnut (NT$300), and their signature dish, French Dill Weed Broil Chicken (NT$450).
