Hosan has been operating in Changhua for many years, but this is their first entry into Taichung's sharks' fin market. With a variety of Japanese side dishes, they aim to incorporate top-grade ingredients with Kaiseki cuisine to develop a new diverse style of Japanese dining. After winning plenty of praise over the years, their latest location has attracted many old and new customers, including those who have returned to the restaurant a record seven times in a single month. Needless to say, the great food speaks for itself. With old Japanese-style tile eaves outside the building and wooden beaded curtains inside to partition rooms and provide customers with some privacy, the whole place resembles a cozy Japanese home. The menu includes a Japanese palace-style meal with truly fabulous delicacies--everything from braised shark's fin soup and sashimi to abalone with steamed bean curd, and salmon with steamed rice. Last but not least, all of this wonderful cuisine comes with a house salad and fruit beverage for only NT$580. Hosan offers great value and quality food to customers, cutting costs by purchasing its own stock so that diners can really enjoy exceptional cuisine for affordable prices. --By Tammy Huang, translated by Ann Lee
