This new Windsor Hotel restaurant focuses
on fusing Japanese and Western cuisine, food-preparation
techniques and presentation styles. Leading this endeavour
is Head Chef Ono Katsuya. Although Japanese, he's actually
a trained French chef, revealing his talent through
artistic entrees, from the Marinated Salmon and Vegetable
with Sushi Rice--a Japanese dish presented Western-style--or
the main courses like Roast Fresh Lobster with Japanese
Carrot and Coriander Sauce, and US Beef Tenderloin with
Baked Eringi Mushroom and Teriyaki Balsamic Sauce. The
chef, whose broad cooking experience encompasses several
continents and establishments like the Tokyo Bay Hilton
and Grand Formosa Regent hotels, says that this fusion
brings the latest Tokyo dining trends to Taichung. To
help guarantee authentic, tasty flavors, many of his
ingredients are shipped fresh from Japan each week.
For lunch, Warabi offers a traditional Japanese "bento"
lunch box for NT$585; noodle and rice bowl sets for
NT$388; tempura, sushi, sashimi and teppanyaki sets
(NT$380-580), plus a la carte items. Dinner is more
elaborate with a big variety of a la carte appetizers,
sashimi, sushi, teppanyaki and other items, or a set
Chef's Choice Menu (NT$1,280) and Teppanyaki sets (NT$1,200-2,980).
A good selection of wines and sakes is also served.
