Thailand Noodle King: Tuna Salad

---By Douglas Habecker Translated by Sho Huang

Ingredients:
Shredded carrots and onions; chopped parsley, celery, garlic, and small red onions; lemon juice; tuna chunks (canned); peanuts; coconut milk; Thai fish sauce; spicy oil (red pepper powder mixed with heated salad oil)

Instructions:
Prepare near-equal portions of the above ingredients. Except for the peanuts, mix all ingredients in a bowl, with fish sauce and spicy oil added according to your taste. Before serving, sprinkle peanuts on top.

This salad isn't actually a traditional Thai dish but, rather, was invented by Thailand Noodle King restaurant's chefs. Quick and easy to make without any cooking necessary, this dish packs a punch with a typical Thai-style explosion of sweet and tangy-sour flavors. The variety of ingredients also provides an equally-interesting mix of textures. Enjoy this at home or at Thai Noodle King (located behind Sogo Department Store), ideally with a tall, cold glass of coconut milk.
