Mr. Hong, in his early thirties, has been in the restaurant business for almost 20 years; even his army service didn't stop him from cooking. With a smile, he notes that Japanese food doesn't necessarily have to be expensive, as a plate of sashimi here starts from NT$120. A serving of barbecue chicken or intestine is only NT$30, stir-fried Oolong Noodles with numerous delicious ingredients costs NT$50, a plate of assorted sushi is NT$60, and a clam dish with lots of green onions and butter costs NT$120--all prices that are fairly reasonable. Mr. Hong says that to ensure fresh ingredients it is necessary to lower prices to boost sales volume flow, which benefits the owner as well the customers. Although prices are low, neither food quality nor service are compromised. The restaurant employs more than 10 chefs as well a number of staff to assure the prompt delivery of the dishes and high food quality, helping guarantee customer satisfaction.
