E Fang Gung boss Mr. Wu has a professional chef's license and used his skills to set up his own goose restaurant. Fresh, delicious meat is offered here and tastes as good as it looks. While good culinary skills are important, the selection of high quality meat found here is also a key. All of it is brought over from a farm in Taichung county's Dali city and comes from geese that are approximately 120 days old--known to provide the tastiest meat. The meat is boiled in water for about one hour before it is ready. Every part of the bird, from head to the juicy breast meat, has its own unique flavor. Fatty meat closer to the bird's bottom is also sweeter and more tender. Customers can also asked for their goose to be deboned and thinly sliced. The price is NT$10 per ounce and a plate for two to three people costs about NT$100. The goose head (NT$30) is bony with little meat but has a flavor that grows as you chew. The feet (NT$10) go great with an alcoholic beverage and the liver (NT$10) is soft and tasty. All the meat served here is sealed by machine, clean and sanitary. Shredded ginger, mustard, special sauce and fresh, non-fatty bamboo shoots come with each order, and the eatery also offers free goose soup stock--great for taking home to make soup or congee.
