Ke Wa Pu is a new restaurant that captures the essence of XinJiang-style mutton shish kebabs. This restaurant on wheels is colorful and exotic. With irresistable aromas wafting from the barbecue, it has already attracted many connoisseurs. In a very short period of time, similar vendors have popped up at Feng Chia and Zhong Xiao night markets, tempting pedestrians with its flavorful BBQ. Under the instruction of a Uighur specialist, the mutton is prepared in the same way as the most popular mutton shish kebab restaurant in Urumqi, using a special charcoal cooking method. At Ke Wa, the white and red meats are flavorfully basted and then cooked until the outside is slightly burnt and the inside is soft and tender. Try it and you will taste a slightly chewy piece of meat that melts in your mouth. The mutton comes in three different flavors: smoked, seasoned, and spicy. The owner spares no expense in buying the finest quality mutton to give the customer a most splendid dining experience. --By Catherine Liu, translated by David Druetzler
