The Taichung branch of Top-D (one of seven around Taiwan)
has been around for ten years. Given the competitive
nature of the island's food industry, this achievement
is evidence of a good reputation and consistenly high
quality.
Top-D has created an eating culture centered on shellfish.
Not only does the restaurant aspire to provide the best for
its customers, but it hopes they are able to experience shellfish
culture for themselves. This includes understanding the origins
of the shrimp, the different types, the various ways of preparing
them, and--lastly--how to savor them.
All of this helps customers understand what they are consuming,
and will hopefully inspire fond memories. By immersing the
customers in this shellfish culture, guest not only pay for
a meal, but rather, they partake of an entire culture.
Quality control here is especially impressive. When seeking
quality Thai freshwater long-limbed shrimp straight from
shrimp farms, the selection staff look for intact limbs,
ideal physical size, and vitality. Fresh, lively shrimp are
then sent to the restaurant, while five-star hotel chefs
are brought over to draw up an exquisite menu.
One of the chef's special is the Lemon Shrimp (NT$600), deep-fried
shrimp with a crispy outer-layer and lightly sweet inner
meat. The shrimp is dipped in a one-of-a-kind lemon sauce,
bringing both a sweet and sour zest to your palate. It is
said that once you start, you can't stop.
Earlier this year, the restaurant introduced the Fresh Shrimp
Vermicelli Pot (NT$700). Fresh shrimp, vermicelli and rich
pork stock are cooked in quality clay pots, which helps blend
flavors. It is a given that the shrimp is mouth-watering,
but what is surprising is how well the vermicelli is able
to absorb the stock, creating a rich flavor and chewy texture.
Another recommended dish is the Steamed Lobster (NT$950).
Instead regular Australian lobsters, Top-D chefs use Boston
lobsters which are low in fat and cholesterol. And unique
is the Traditional Lamb Bone Delicacy (NT$250)--one uses
a straw to suck out the bone marrow!
