What business should a career military man start after
retiring from service as a commander? The answer is
to start over, learning from the basics. Ning Po Fried
Dumpling's owner, Mr. Shen, traveled to Keelung to
learn from his relative how to make delicious and unique
fried dumplings. He arose around 4 a.m. every morning
and worked until late at night, and finally learned
the skills required to make good pastries. Dishes range
from fried dumplings, big wontons and yam ramen to
cheese scones accompanied with the house special, charcoal-cooked
soy milk, which the hostess guarantees is so good that, "The
more you drink, the healthier you'll be!" She
once was the owner of a product counter in a department
store, but full-heartedly dove into managing the new
business with her husband. Commencing with health as
the first step, she incorporated the new "3-low,
2-high" gastronomic concept into each of her shop's
dishes. She is also actively developing yam, tomato,
and spinach dumpling wrappers, which are truly “Low-fat,
low-salt, low-cholesterol, high-iron and highly fresh.” After
initially setting up a stand in an evening market,
they gained a good reputation, and now own their own
storefront. They stress that everything must be continually
improving. They even put their hearts into making the
sauces from garlic paste, hot peppers and fruit pastes.
